September 29, 2016 - 15:00 BST hellomagazine.com Vikram Vij opens up about cooking for Prince William and Kate Middleton in Canada, and shares recipe he cooked for the royals Vikram Vij was given the opportunity of a lifetime when he was asked to cook for Prince William and the Duchess of Cambridge , née Kate Middleton, during their visit to the Taste of British Columbia Food Festival this week. Understandably, the India-born Canadian chef put a great deal of thought into serving up the perfect dish for the couple – from his choice of meat to the level of spice. At their April 2011 wedding, William and Kate famously dined on a saddle of organic lamb, and so Vikram chose a popular lamb dish from his Vij Restaurant in Vancouver – Wine-Marinated Lamb Popsicles in Fenugreek Cream Curry, which he renamed 'Maharajah's Lamb Popsicles' for the purpose of their visit. As they approached Vikram's stand, they warmly greeted him with the traditional Indian welcome 'Namaste', before taking the time to discuss the dish with the chef. The Prince – who is not a big fan of spicy food – complemented Vikram on his "perfect" spice level, as the trio talked about the importance of sourcing and using local produce. At the end of their chat, Vikram then presented enthusiastic cook Kate with a copy of his latest book, Vij's Indian , saying that he hoped she would try out some of the recipes when she gets home. They were studies in stark contrasts: “Loft Music” floated gossamer samples of Brooklyn indie rockers Beach House over trap drums, and “What You Need” sunk a sample of Aaliyah’s voice under gauzy synths, her whisper bubbling up through the watery mix like a lover emerging from a warm bath, all of this in service to an angelic voice uttering the most devilish advances. The singer, an East Toronto native and recent college dropout named Abel Tesfaye, gave voice to our darkest late-night moods, to the allure of pushing a body past its limit in pursuit of pleasures both psychedelic and carnal. In March 2011, the Weeknd released House of Balloons, a mixtape sequenced like a journey through the highs, lows, and lonesome aftereffects of a wild night out, setting the scene by advising the listener in the first song that “You’ll wanna be high for this,” then wandering through strip clubs, parties, and after parties to the inevitable anxieties and pangs of withdrawal that surface as you sweat everything out the next day. The Weeknd turned R&B on its head without showing his face. Without glossy videos or a lively social-media presence — this in the days before Instagram caught on — Abel lingered in your head like stifled urges. Djansezian/Getty Images After Jay Z’s attempt to delay his extremely convoluted “Big Pimpin’” trial was turned down, the rap mogul took the stand Wednesday for the first time. The Hollywood Reporter reports that he testified to having zero knowledge that the song even had a sample in the first place. (It does: The hook is a snippet from a song by Egyptian composer Baligh Hamdi. Thanks to the some complicated rights issues, Jay and Timbaland are now being sued by Osama Fahmy, Hamdi’s nephew.) “I didn’t think there was a sample in it. Timbaland presented me with a track. I didn’t even think about there being a sample,” he told Fahmy’s attorney. When asked how he couldn’t have known, he explained, “That’s not what I do. I make music.” What else does Jay Z do, exactly? That’s a question his own lawyer had him explain for the court in what resulted in just one of the day’s many accidentally funny exchanges: Jay Z: “I make music, I’m a rapper, I’ve got a clothing line, I run a label, a media label called Roc Nation, with a sports agency, music publishing and management. Photo: Mat Hayward/FilmMagic Back in August, we learned that after 15 years, Jay Z would have to testify in an absurdly complicated and long-standing lawsuit involving his hit song “Big Pimpin.’” Jay Z, who is being sued by the nephew of late Egyptian composer Baligh Hamdi for sampling Hamdi’s song “Khosara, Khosara” without proper licensing, was expected to take the stand in court next week along with the song’s producer, Timbaland. However, it now appears the trial may have hit another snag. According to The Hollywood Reporter, Jay Z filed paperwork on Friday requesting to have the trial delayed on the grounds that Hamdi’s nephew, Osama Ahmed Fahmy, is playing games. He claims that Fahmy gave late notice to Jay Z’s lawyers that Fahmy would not be attending the trial due to a “medical condition,” and instead wants to use a deposition from six years ago as his testimony in order to “avoid cross-examination at trial.” Hov isn’t buying it and has requested that the court block Fahmy’s actions, and either order Fahmy to take the stand or throw out the dated deposition. But Jay Z may have another reason for wanting the trial delayed: THR has also learned that records of how much Jay Z has profited from “Big Pimpin’” in the 15 years since its release could be made public at the trial, consequently unveiling top-secret details of his contract with events company Live Nation. His lawyers have likened that deal to the guarded formula for Coca-Cola, arguing that if those numbers were to be revealed in discussions of how much Fahmy could be awarded in damages, Live Nation would be unable to procure similar deals with other artists.
